What's 4 diner? Guilt-free pinto beans tacos




This is a FAST and DELICIOUS meal!
Served with an organic baby spinach salad or some lightly sauted broccoli,  it's satisfaction guarantee.

Ingredients: (all ingredients can be found at Trader Joe's or Whole foods)
- 1 sliced onion
- 1 tbs coconut oil
- 1/2 Vegan chorizo or 1 block diced firm tofu
- 1 can Pinto beans
- 1 pack taco seasoning
- 1 lemon
- Natural sunflower seeds
- 1 pack taco shells
- Hummus
- Fresh, cream-free guacamole
- Alfalfa sprouts or other sprouted beans.
- Vegan grated cheese (optional - Trader Joe's soy cheese or Daiya cheese from whole food)

1. Set your oven at 150 and place the taco shells on the oven tray
2. on medium heat, add into a frying pan the coconut oil and the diced onion. stir until the onion turns to light brown
3. Add the drained pinto beans, the vegan chorizo (or diced tofu), the squeezed lemon juice, the pack of seasonings and a generous handful of sunflower seeds into the frying pan. Cook and stir often for 5mn.

SERVE: Into the warm taco shell, place layer after layer : Guacamole, beans, Hummus, Vegan cheese (optional), Alfalfa sprouts.
